Protein no bake oatmeal bars are a success! These were so easy to make and super yummy! Feels like I am eating dessert for breakfast or post workout snack. These bad boys just came out of the freezer, so I am letting them thaw for a minute before they end up in my belly!

Recipe:
. 2 scoops of chocolate shakeology (you could use protein powder of choice)
. 2 cups rolled oats
. 2 tbsp chia seeds
. 1 tsp cinnamon
. 1/2 cup almond milk
. 1/4 cup pure maple syrup . 1/4 cup peanut butter or nut butter or choice
. 2 large ripe bananas

Mix dry and then wet ingredients and put in baking tin and let sit in fridge for 3 hours or freezer for 2 and enjoy!

Wanted to get rid of some of my pantry items (and also always ballin’ on a budget) so I decided to whip up some lentil burger patties for dinner as my source of protein! Also shared some with my sister️. These were inspired by @minimalistbaker’s sweet potato burger recipe. Paired mine with some roasted brussels and some @lovebeets tossed with garlic red wine vinegar and sea salt.

VEGAN LENTIL BURGERS
1/2 cup cassava flour
1/2 cup frozen corn
2 tbsp flaxseed
1 cup uncooked green lentils
3 carrots
1/4 Finely chopped red onion
2 cloves of garlic
1 tbsp cumin
1 tsp smoked paprika
1/2 tsp salt and pepper
•First I cooked the lentils in a rice cooker. Next I added carrots to boiling water and cooked until fully soft. I added the carrots and a little warm water to a blender and made a purée.
•Mash the lentils and carrot purée in a separate bowl. Add all of the other ingredients and mix until fully combined. I used my hands haha. Bake at 400 for 20ish mins!

Potato leek soup with white beans 
1. Sauté in olive oil chopped leak, carrot, celery@for a few minutes. 
2.  Add vegetable stock and cubed potato for a few more minutes 
3.  Season with salt and pepper to taste.  Add any herb like thyme.  I added sage that I sautéed first on olive oil in a separate small pan.

1/2 cup sweet potato purée⠀
1 small avocado⠀
2 whole eggs⠀
1/3 cup agave⠀
2 tbsp coconut oil, melted⠀
3 tbsp coconut flour⠀
1/3 cup raw cocoa powder⠀
1 1/2 tsp baking soda⠀
1/4 tsp sea salt⠀
1/3 cup mini chocolate chips⠀

•Directions•⠀

Preheat oven to 350 // Line a mini-muffin tin with paper liners or grease with oil⠀

Combine all of the ingredients in a blender, mixer or food processor, except for the chocolate chips // Blend until smooth⠀

Fold in 1/4 cup chocolate chips⠀

Fill each muffin well with batter // Top with remaining chocolate chips⠀
